Twice Baked Potatoes

4 large baking potatoes
1 tablespoon(s) vegetable oil
4 strips bacon, cooked
6 tablespoon(s) butter
1/2 cup(s) milk
2 tablespoon(s) fresh chopped chives
2 tablespoon(s) freshly grated parmesan cheese
2 tablespoon(s) grated sharp cheddar
1 tablespoon(s) chopped onion
1 teaspoon(s) salt
1 teaspoon(s) pepper
Wash and dry potatoes. Rub oil into skin and bake in 350 oven for one hour. Let cool 5 minutes or until easy to handle. Crumble bacon into bits and mix with all other ingredients except cheddar. With a knife, cut off the very top of the potatoes. Hollow out with a spoon,leaving a little potato against the skins so they wont fall apart. Add potato meat to the bacon mixture. Restuff potato skins and top with cheddar. Bake in a 300 degree oven for 1/2 hour.
